Spaghetti with Red Tuna Bottarga, Sicilian Almonds, and Garlic

🛒 Ingredients for 2 people

160 g of spaghetti or linguine or busiata
Sicilian Artisan Pasta -
50 g of Red Tuna Bottarga
-
20 g of Sicilian almonds
-
1 glass of white wine
-
Fresh parsley
- Salt
👨🍳 Procedure
1️⃣ Bring salted water for the pasta to a boil.
2️⃣ Coarsely grate the bottarga and set it aside.
3️⃣ Toast the almonds in a pan for a few minutes (be careful not to burn them). Set aside.
4️⃣ In the same pan, add a drizzle of extra virgin olive oil and a crushed garlic clove. Let it brown gently.
5️⃣ Pour in the white wine and let it evaporate.
6️⃣ Turn off the heat and add half the bottarga and the chopped almonds
7️⃣ Drain the spaghetti al dente and toss it in the pan with the sauce.
8️⃣ With the heat off, add a drizzle of raw oil.
9️⃣ Serve garnished with the remaining bottarga and fresh parsley.
