Known in the Trapani dialect as โTunninaโ , Tuna Bresaola represents one of the most refined expressions of the Sicilian seafood gastronomic tradition.
It is made using one of the most tender cuts of yellowfin tuna (Thunnus albacares) , carefully selected and processed according to an artisanal process. The fillet is salted by hand and left to mature slowly in dedicated facilities, where temperature and humidity are constantly monitored to ensure a safe, high-quality product.
The result is a bresaola with a natural brown color , a soft and velvety texture on the palate. The aroma is delicate but distinctive, while the flavor is fresh, balanced, and pleasantly savory , without being overpowering.
