Tuna Heart is a rare and little-known specialty, considered one of the most authentic products of the ancient tuna fishing tradition. It is obtained from selected tuna innards , processed according to a time-honored artisanal process that is increasingly difficult to find today.
The process is similar to bottarga: the heart is salted, delicately pressed, and left to mature , then slowly dried. After about 20 days , the product reaches its ideal consistency, maintaining its distinctive intense and deep character.
Production is limited and seasonal , which is why the Tuna Heart is considered a true gastronomic rarity , appreciated above all by connoisseurs and lovers of strong flavours.

The flavour of the Tuna Heart is strong, enveloping and persistent .
Traditionally it is served:

seasoned with a drizzle of extra virgin olive oil

Ideal as a seafood appetizer , or to enrich simple salads and cold dishes with an authentic flavor.
