The Red Tuna Ventresca Raw Ham is a gastronomic specialty of excellence, obtained from the artisanal processing of the ventresca , one of the most prized parts of the Mediterranean Red Tuna (Thunnus thynnus) .
Ventresca is distinguished by its extraordinary tenderness and naturally soft texture, which on the palate recalls the delicacy of the finest traditional hams, reinterpreted with a seafood twist. After careful selection, the meat is salted with sea salt and flavored with dried herbs and spices , then left to mature slowly to enhance its flavor and elegance.
The result is a product with a dark red colour tending towards brown , with a slightly spicy aroma and a delicate, harmonious and persistent flavour , never invasive.
From a nutritional point of view, bluefin tuna belly ham is rich in proteins and naturally low in fat , as well as being a precious source of Omega 3 and Omega 6 , minerals such as potassium, selenium and phosphorus , and B vitamins.
