Tuna Lattume is a rare and rare seafood specialty, prized primarily by connoisseurs and experts in traditional cuisine. It is pure white, tending towards beige , with a soft yet firm consistency , a hallmark of meticulous, artisanal processing.

After catching the Bluefin Tuna (Thunnus thynnus) , the tuna is carefully covered in sea salt and left to dry , using traditional methods linked to ancient tuna fisheries. This process preserves its natural characteristics and intense aromatic profile.

Even today, tuna lattume remains a gastronomic delicacy that is difficult to find , a niche product that represents a true expression of tuna culture and the most authentic seafood cuisine.

The flavour of the Tuna Lettuce is strong and savoury .
Before using it, it is recommended to desalt it thoroughly by leaving it to soak in plenty of cold water.

Once desalted, it is ideal:
