For a healthy diet, it's important to eat a varied and diverse diet, including not only the health benefits of fruits and vegetables, but also many other nutrients, including olive oil.
Extra virgin olive oil contains the highest amount of polyphenols, squalene, and vitamin E, all substances with powerful antioxidant properties.
Its numerous nutritional qualities also derive from the perfect balance of monounsaturated (over 77%) and polyunsaturated (8%) fats, and from the fact that it is low in saturated fats (around 15%), characteristics that differentiate it from any other animal or vegetable fat.
Furthermore, it is a highly energetic food (899 Kcal per 100 ml) but cholesterol-free.
According to European regulations, an oil is considered extra virgin only if it is mechanically cold-pressed and has an acidity level of 0.8% or less, in addition to specific parameters of flavor, color, aroma, and appearance. Compared to other oils, extra virgin olive oil has a lower level of acidity precisely because the olives are cold-pressed mechanically within 24 hours of harvest.
Furthermore, the olives are strictly organically grown, using production and cultivation methods that employ only natural substances. The use of synthetic chemicals, such as fertilizers, herbicides, and insecticides, is strictly prohibited because they can cause serious alterations to the natural habitat and, together, negatively impact the healthiness and authenticity of the food.
According to EC Regulation 1019-2002, organic extra virgin olive oil is obtained, as with conventional production, exclusively from olives and solely by mechanical means, that is, by pressing the olives alone. This is also confirmed by Regulation (EU) No. 1169/2011, according to which the following wording must be included on the label of an organic extra virgin olive oil: "superior category olive oil obtained directly from olives and solely by mechanical means." Furthermore, the addition of any chemical additives is not permitted.
Supporting this production method means developing a production model that avoids the excessive exploitation of natural resources, adhering to some technical principles:
Exclusion of fertilizers, herbicides, insecticides and all petroleum-derived products.
Use of resistant plants that adapt to the territory.
Use of organic fertilizers to improve the soil's potential.
Plant protection based on prevention and respect for the environment.
