Product Description
Tuna Salami with Fennel is a refined specialty of the Trapani seafood tradition, known locally as "Ficazza." It is an authentic seafood cured meat , obtained from artisanal processing of tuna meat, using techniques inspired by traditional pork butchering.
The tuna meat is finely minced , salted, and seasoned with black pepper and wild fennel seeds , an ingredient that gives the product a typically Mediterranean aromatic flavor. The mixture is then stuffed into inedible natural casings , pressed for approximately 20 days , and then aged .
Ripening takes place in controlled microclimate environments, designed to ensure a slow and uniform transformation, capable of enhancing structure, aromas, and flavor. The result is a compact, intense, and spicy product, free from preservatives or additives.
