Tuna Salami with Sun-Dried Tomatoes , known in Trapani tradition as "Ficazza," is one of the most original expressions of tuna processing. A true seafood cured meat , obtained by transforming tuna meat into a cured product with a bold character.
The tuna meat is minced, salted, and spiced , then stuffed into natural casings and pressed for approximately 20 days . The curing process follows, carried out in controlled microclimate environments designed to ensure a slow and uniform transformation, enhancing aromas and texture.
The addition of sun-dried tomatoes gives the salami an intense and harmonious Mediterranean flavor, making it unique among cured fish products . With no added preservatives, it's a specialty for those who love authentic and unconventional flavors.
